Caerphilly! My new favorite cheese!!
Caerphilly is a town in Southeastern Wales where we went on a trip through Europe a few years ago. It’s where I saw my first castle! We are both Welsh in our ancestry, and Barton’s great, great grandfather was even a lighthouse operator on the northern coast! It is home to the largest castle in Wales and second largest in Britain.
It’s also the origin for a cheese named after the town, Caerphilly cheese!!! At one point, it was a mining town and the cheese was made with extra salt to help replenish electrolytes to the miners after a long day of hard work. It’s a salty, tangy cheese with a hard rind and softer inside. It’s quickly become one of our absolute favorites!
